 Region of production: the whole territory of the provinces of Lecce, Brindisi and Taranto.

Soil Composition: sandy and clayey seedling containing calcium and magnesium.

Growing system: apulian trailing vines.

Average production: 100 quintals per hectare.

Output per hectare: 65 hl/ha.

Vines: 100 % Negroamaro.

Vinification: in stainless steel containers.

Fermentation Temperature: 30/33°C.

Maceration time with grape skins: 10 days.

Ageing: in oak barrels.

 

CHEMICAL DATA

¨      Alcoholic content: 13.10 Vol.%

¨      Total acidity: 5,70

¨      PH: 3.30

¨      Net dry extract: 30.50

¨      Residual sugars: 4,2 g/l

 

Colour: intense ruby.

Aroma: intense and agreeable aromas with hints of plum, cherry and other red fruit. Very fresh and lively. Light spicy undertone.

Flavor: good body, fresh fruit, fairly good structure, well balanced. In the whole a very elegant, fine and persistent wine.

Serve with: hors-d’oeuvres, pasta dishes with light sauces, white meat and light roasted meat.

Growing system: apulian trailing vines.

Average production: 100 quintals per hectare.

Output per hectare: 50 hl/ha.

Vines: Negroamaro.

Vinification: in stainless steel containers.

Fermentation Temperature: 16-18°C.

Colour: light rosé with visible violaceous glares.

Aroma: intense and elegant aromas with hints of flowers. Very fresh and lively.

Flavor: good body, elegance, fairly good structure. Light acidulous note which makes this wine particularly fresh and lively.

Serve with: hors-d’oeuvres, pasta dishes, white meat and certain cheese types; serve at 10-12°C.

Vinification: in stainless steel containers.

Average production: 100 quintals per hectare

Output per hectare: 60 hl/ha

Vines: 95% Negroamaro, 5% Black Malvasia from Brindisi and from Lecce

Vinification: in stainless steel containers

Fermentation temperature: 30/33°C

Maceration time with grape skins: 12 days

Flavor: very balanced, harmonious, fruity. Good structure, fine tannins. An elegant, luscious wine with a long finish

Serve with: hors-d‘oeuvres, especially charcuterie, pasta dishes, roasted meat and game.

Vines: 80% Negroamaro, 20% Black Malvasia from Brindisi and from Lecce

Vinification: in stainless steel containers

Fermentation temperature: 30/33°C

Maceration time with grape skins: 10 days

Aroma: very intense and rich aromas. Strong aromatic notes of maquis, of berry jam and of ripe plum; delicate spicy notes.

Flavor: fresh and lovely flavors with well balanced tannins and acidity. Good structure and concentration which make it an elegant and smooth wine.

Serve with: any kind of hors-d‘oeuvres, italian pasta with light sauces, roasted meat and medium flavoured cheese.

Region of Production: part of the territory of the towns of Salice Salentino, Veglie and Guagnano (Lecce) as well as part of the territory of the towns of San Pancrazio Salentino and Sandonaci (Brindisi).

Soil Composition: sandy and clayey seedling containing calcium and magnesium.

Growing System: spurred cordon.

Average Production: 90 quintals per hectare.

Output per Hectare: 55 hl/ha.

Vines: Negroamaro 80% and Black Malvasia of Brindisi and Lecce 20%.

Vinification: in stainless steel containers with two daily pumping overs and delestage.

Fermentation Temperature: 28/30°C.

Maceration with Solid Parts: 12 days.

Ageing: in 15 hl French oak casks for 10 months.

Refinement in Bottles: 10 months.

Colour: intense ruby.

Aroma: intense and fruity with hints of herbs. Hints of ripe red fruit and berry-jam; the tobacco, mushroom and underwood aromas are very agreeable.

Flavor: great structure and power. Good polyphenols. Fairly round and sweet tannins. Outstandingly elegant and harmonic. Excellent persistence.

Serve with: pasta dishes with tomato and meat sauces. Excellent with roast meat, game and ripe tasty cheese.

Region of production: partly from the territory of Manduria, Sava, San Marzano, Fragagnano and Avetrana (Taranto) and partly from the territory of Erchie, Oria and Torre S. Susanna (Brindisi).

Growing system: Apulian trailing vines

Average production: 90 quintals per hectare

Output per hectare: 55 hl/ha

Vines: 100% Primitivo

Vinification: in stainless steel containers

Fermentation temperature: 30/33°C

Maceration time with grape skins: 15 days

Ageing: in oak barrels

¨      Total acidity: 6,20

¨      PH: 3.34

¨      Net dry extract: 33.50

Colour: dark ruby with violet hues

Aroma: very intense and sweet aromas. Hints of ripe plum and blackberry with delicate notes of chocolate and vanilla. Also gives light mouthfeel of aromatic herbs and licorice.

Flavor: very smooth and fat, with loads of sweet tannins, with a fruity, warm and spicy finish. Very balanced and persistent.

Serve with: any kind of hors-d‘oeuvres, rich pasta dishes and game or stew; excellent with full-flavoured cheese.

The bottle should be opened a couple of hours before serving the wine.
